Strawberry Shortcake Cupcakes


I made Miss Melicious Strawberry cupcakes over the weekend for my Nieces 5th Birthday, all I can say is Yum!



She has some really cool cupcake recipes in her new book like bubblegum, creamsicle, fuzzy Navel and more.
I made a mixture of two Dollicious for the cake and Strawberry shortcake for the frosting and topped them off with a white chocolate high heel.



Dollicious Cupcake

Makes 12
125g butter,softned
1 cup white sugar
1 large egg
1 tsp vanilla
1 1/2 cups plain flour
1 1/2 tsp baking powder
1 cup milk

Strawberry Shortcake Frosting

125g butter, softened
4 cups icing sugar, sifted
2 tbsp milk
1 tsp strawberry extract
2 tbsp Strawberry jam or what ever berry jam you have
(I also added 2 drops of pink gel colour to make it abit pinker)

Pre-heat oven to 180c
Line a cupcake pan with liners. Cream butter and sugar until light and fluffy, about 5 minutes. Add eggs and vanilla and beat well. Combine dry ingredients. Add to batter in thirds alternately with milk. Begin and end with dry ingredients. Mix well after each addition. Fill liners two-thirds full and bake for 18-20 minutes or until tips spring back when touched gently.
Cool in pan for 5 minutes, then remove and cool completely before frosting.

For the Frosting: Beat butter and slowly add icing sugar until crumbly. Slowly add milk, extract and jam until the desired consistency is reached. Add more milk if required. Beat for 3-5 minutes until light, fluffy and creamy, but still firm enough to pipe.



The cupcakes went well with the Purse Birthday Cake I also made.

  1. I/ve never had a Miss Melicious cupcake but yours look great, I'd don't think I will try the fuzzy navel recipe though!
